While I am sure that LilyPond can do a better job than Finale in some aspects of initial layout, you must be talking about Finale's default output, before one actually does the page layout. That is wonderful, Knut. So basically I can open an empty FontForge document, name each glyph and create the symbols I need (clefs, noteheads...). Is that a correct way to do?
