I just encountered an identical situation.

I put "unis." at the double-stop.

Yes, I know the bracket essentially ends the divisi marking, but, you know - belt and suspenders. One can never be too clear.

For your first question: Since you use Dorico, why not turn off condensing (manually) for the flutes for those three pages? Then the Flute 2 staff will be hidden (assuming you have "hide empty staves" activated) and the score label will just show Flute 1. For the second situation: I think ...

Actually, my example would indicate E-flat Clarinet, not Bass (= means [meant?] tertiary instrument) and no doubling for the 2 Bassoons at all. Yes, I (and most librarians in the US) am familiar with this. No symbol separates the ww from the brass - only a space.
