I'm lucky in that sense, I rarely resort to Italian expressions, preferring to simply use my native tongue (French), where if I really needed the pedal to be held until the end I could simply write "hold the pedal until the end" (tenir la pedal jusqu'à la fin.) It would appear that scores ...

I wouldn't interpret "ped. sempre" as meaning to hold the sustain pedal until the end. I'm looking at this as a pianist. I WOULD, however, hold it until the end if it said "pedal sempre alla fine". I've come across a few works that required this over the years. however, in my own...

1st piece of advice: absolutely completely forego ANY desire to do any layout work before you have finished entering notes. Dorico, by default, does a very good job laying out material for you. Don't move measures, change page layouts, hide or remove staves, etc... until you have absolutely entered ...
